You can win the DMV hearing! Many DUI lawyers credibly report 50 - 70% win rates at the DMV hearings. Even the DMV reports a 35% win rate without a lawyer. If you do nothing and ignore the hearing your license will be suspended (4 months for a first DUI.) Even if you lose, however, you can still petition for a restricted license.
At the DMV hearing the DMV shoulders the burden to prove that 1) you were lawfully stopped and arrested, and 2) that the BA at the time of driving was over a .08. The DMV will most likely not call witnesses and will rely on the officers' reports and the blood alcohol test results.
Chances are a skilled California DUI lawyer can show that the officer's documentation was insufficient to support a suspension. Lawyers can also call blood alcohol or breath machine experts to show that the results are incorrect.
Remember to get your notice filed within 10 days. The hearing will usually then be scheduled within 60 days. As with most of these DUI issues get a good DUI attorney onboard early and let them maneuver the case to your advantage.
